Vanilla (Vanilla planifolia) is a vining orchid cultivated for its pods (beans). Following a specialized curing process, the pods turn dark brown, developing a rich, sweet, creamy, warm, and complex aroma profile. While vanillin is a primary aromatic component, natural vanilla’s profile is created by a synergistic blend of numerous trace compounds; thus, sensory quality should not be judged by a single chemical metric alone.
Vanilla is widely utilized as a flavoring and aromatic agent in bakery products, confectionery, chocolate, ice cream, beverages, desserts, and extract production.
